Ex-Bacco chef opening SheWolf pasta restaurant in Midtown

When former Bacco Chef Anthony Lombardo opens SheWolf Pastificio & Bar on the ground floor of the Selden building in Midtown early next year, Detroit will become home to one of only a few restaurants in the country that mill their own flour for house-made pasta.

"When most flour is milled in an industrial aspect where it's shipped across the country or even from Italy you have to add preservatives," Lombardo, 35, said. "When grains are milled fresh, they have these delicious nutrients and oils in them that go rancid if you leave them out at room temperature for too long.
